Yields1 Serving
 1 cup full fat coconut milk
 2 bananas (broken into pieces)
 ¼ cup coconut butter
 1 tsp vanilla extract
 1 pinch sea salt
 1 tbsp grass fed gelatin
 1 cup blueberries
 1 ¼ cups finely shredded coconut

Place a medium pot on the stove on medium heat.

Add the coconut milk, bananas, coconut butter, vanilla extract and sea salt to the pot.

Bring to a boil.

Turn down the heat and simmer for 10 minutes, stirring every couple minutes to break up the banana pieces.

Add the gelatin and stir well to dissolve.

Add the blueberries and cook for another 2-3 minutes.

Remove from heat and add the shredded coconut until it reaches your desired thickness.

Let sit for approximately 5 minutes to allow the coconut to soften.

(Optional) ground cinnamon, nut butter, or chopped nuts.
